Salmon Cakes made with pumpkin puree and egg. I borrowed  "the Heal Your Gut cookbook" by Hilary Boynton and Mary G. Brackett from the library. The recipe is on p. 151. The cakes were so good I didn't need the lemon pesto to go with it.






 Tender Pan-Fried Chicken Breasts

This is the best pan-browned then baked chicken I've ever had. The spices and herbs combined are phenomenal. The ginger, dried mustard and thyme were just the beginning to this. I had some gluten-free flour in the house if you choose to go that route. I also cut the recipe in half and used olive oil. I was so happy to use the tarragon I just bought and was dying to use.

Milk is healthy for energy for our bodies because of its phosphorus content which carries B vitamins. B vitamins are in healthy fats such as salmon. Olive oil is high in B vitamins. Why milk gets all the bad rap and I have to constantly feel bad about feeling great after drinking it is unneccesary. So if you feel like you need to drink milk, drink it!

 Vegan Gluten-Free Pumpkin Pie
This is a sure winner. The pie filling is the best. I worked with a rice pie crust but it was a bit crunchy because I tried to make my own rice flour with a 200-watt food processor - not the best idea; the flavor was still there. I also made my own homemade whipped cream (8 ounces whipping cream, 1/2 tsp vanilla and 1/2 tsp honey, more or less - taste test, and blended it in my blender) and omitted the brown sugar.

Vegan Pumpkin Ice Cream
I omitted the cashews and used regular 2% milk that I had in the house and omitted the sugar.

For those of you who missed the pumpkin spiced muffins here they are again to get all your pumpkin spice cooking done at the same time.

My son's homemade Chinese food.


Finding out I have Celiac disease, losing side effects after going off gluten, I needed to find recipes. Very yummy gluten-free, sweetened with honey, banana muffins great for the morning. Doesn't upset my stomach. Don't be afraid to add extra cinnamon. I ate mine with apple butter (recipe here). Another recipe I'm trying to heal with.

Gluten-free Fudgy Brownies
I was surprised how chocolatey these are; they're a bit like fine chocolate.

Other recipes I liked:


Homemade Dark Chocolate
Homemade chocolate with honey, cinnamon (I added 1 tsp.) and coconut oil.

Homemade Tomatillo Tartar Sauce I call it. Unbelievably delicious, and not all those harsh chemicals in store bought.

Tomatillo Chicken Stew 
Very reasonable - tomatillos are very plentiful at food pantries and so good in recipes and as a verde sauce.

Upside-down Pear Cake
I found that coconut flour recipes relax me before bed and keeps me calm during the day.

2-Ingredient Chocolate Banana Ice Cream  
Really cheap and easy 2 ingredient blender ice cream using bananas (which you might get at your local food pantry) and cocoa (which is about $1.69 at Trader Joe's - good investment, makes chocolate too).

Lime Cilantro Chicken with Mixed Rice and Black Beans
I didn't use the honey and added a bit of cumin.

I have to say with everything we go through the worst is to feel abandoned from our pallet, and body for that matter. This dish will leave you very happily fulfilled. And I switched to apple cider vinegar, which I also use with turmeric and honey as an aid to keep my antibodies up and stomach relieved daily. Apple cider vinegar is only .99 at most stores. I also used up some leftover peppers and other vegetables I had on hand: asparagus and broccoli, and I had no onions in the house – still tasted good, I think better actually. I used coconut oil and avocado oil as my oils and I served it over brown rice cooked with a bay leaf. Also, don't over cook the chicken in the browning process, where I don't have searing pans mine doesn't brown, no bother, it still tastes good. Over cooking chicken definitely ruins it. And even though I over cooked it by a couple of minutes or so making sure the juices of the ingredients were soaking in the chicken as it simmered and making sure the juices were stirred well together and set for a couple of minutes after adding the rest of the vinegar makes it perfect. Enjoy and wallah to your journey of healing and working towards a better you with all the pain that goes along with it. You won't feel punished to this after eating this.


I use coconut oil without the flavor of it 'stating this on the jar.'

A dinner I reheated with it. Brought out the wonderful flavors.

Snacks, Desserts, Breakfast and Tips #holisticyeah #lorijeanrocks

I want to add before I start, coconut oil has been helping me a lot. I buy the unflavored, or at least it says that, but it is mild, and use it to heat up my food. It's been helping my stomach. My digestion is easier. I found coconut milk, I like reduced fat, with granola (a bit for my Keto diet) eases my stomach as well in the morning. 




 Breakfast of egg, cheese, and avocado with my breakfast tea which has lemon grass that wakes me up and help kill the fatigue. Eggs inspired by Dr. Don Colbert of the Keto Zone Diet.
Love my ground pepper on eggs and my raisins give me the sugar boost.

My hot cacao drink with some coconut milk was yummy. I melted a square in a pan with the milk and whisked the cacao in.  

Also looking forward to trying Sammy and Bella's Blue Cheese Buffalo Wings, their Black and Blue Cheeseburger perhaps with ground turkey instead. Check out their Salmon Bake (I didn't have the zucchini) and watch on Episode 8 on Netflix.  I want to get an air fryer now after watching Episode 7.

New Lori Jean Keto/Paleo Recipes #lorijeaninthekitchen #holisticyeah #lorijeanrocks

I've been throwing together recipes that I like bending with my body. The energy is still there!! I also have progressed with this diet by actually being able to walk to a holistic store that is usually breathless for me and leaves me mindless without these affects. I could then even after this check out one more store on the way home with the intent in my brain to the thought process of what I was doing with my food calendar. So amazing! My body didn't hurt to walk that far either. I have recently cut out my Häagen-Dazs, (:( Sorry guys, it was good while it lasted; I suggest if you cheat you use them.) and just eat cacao and coconut milk for my desserts.


I took a chance throwing this together learning less is better. I only used ground basil, ground black pepper, a bit of minced garlic and avocado oil on baby red potatoes and sweet potato thinly sliced with shelled shrimp before baking at 375 degrees for 30 minutes. I then covered it for five minutes.

Video at Instagram My adding of a cup of cooked pasta (.5 c. measured broken up in measuring c. before cooking) and some yummy baby tomatoes, (plum and Mexican), and fresh grated Parmesan. I also used the everyday spice when searing/browning the chicken breast in avocado oil (apparently frying in olive oil is not good for you - the heat of the oil is bad?!) and added ground black pepper and sea salt to taste to the whole thing.

Seared salmon with everyday spice, avocado oil, ground pepper, lemon, and sea salt. Sweet potato fries fried in avocado oil with the everyday spice and kale sauteed with butter.

I found a wonderful mild tasting can of coconut milk at Trader Joe's. I bought reduced dat, which is just water added - it's 100 percent coconut milk, because I was afraid the taste would be too much for me. This is recommended for my conditions and used so often in Keto and Paleo recipes.

It quenched my sweet tooth even in a turkey and broccoli casserole. And my body feels more peaceful. I also had avocado oil mixed in with my salad where this helps aid the inner deeper wounds afflicted under my skin. I'm squeaking now. I'm going to try hot chocolate with it using cacao squares. Yum! You can make coconut whipped cream with it too. Much less ingredients than standard homemade. The Keto Reset Diet by Mark Sisson p. 302. You don't need a sweetener and it can be used as frosting. I'll be learning how to make cakes with aluminum free baking soda and maple sugar - made from boiling maple syrup in a pan.
