Homemade Tater Tots
I left the dill out and didn't even have to squeeze out any excess water. No chemicals and saves you from having to go to the store and buy a bag.



As I promised, I'm also sticking to beans, at least one dish a week. I spread it out throughout five days. It buckles down the budget and gives me variety with my vegetables.

Italian Vegan Garbanzo Bean Soup




I left out the cherry tomatoes and only used 1 c. of vegetable broth (I made mine in the instant pot with 1 1/2 c. white lima beans to 3 c. water, rosemary, and a bay leaf and some small carrot pieces). I used the broth from this and it was DELICIOUS. Making the broth again I would put a bit less beans to water. I used celery seed which I do quite a bit instead of celery. It keeps better and I think adds a better flavor. So far, this is the best bean soup I've made.


Instant Pot Potato Leek Soup
Adding one more potato recipe, this is the BEST potato soup I've ever had. I didn't have any leeks and just used onion and it was still great. I also used a homemade seasoned sea salt recipe.

First bean recipe:

Slow Cooker White Bean Soup

Not the best picture but this soup is yum. I will eat this all this week for sure. I had a tuna sandwich with it with homemade mayo - was a bit tricky with a 400 watt immersion blender, but still tasted good, it just wasn't quite as thick as I would like. What amazed me about this soup was the fact that the directions to smash the beans slightly to immerse their flavored liquids into the soup at the end while adding the salt to taste seemed key here. I never expected that was what was going to make the soup taste so good. It brought a wonderful broth flavor to it, so don't be fooled as you stir it along the way if you choose and taste it a bit, even before the last step that I mentioned. I cut the recipe to 1 1.2 cups of beans and 4 cups of water and slightly adjusted the other ingredients to this.




To finish it off I ate my delicious handmade Gelato. I use a papaya that I had and had put it in the freezer first and only used 1 c. of coconut milk and some honey to sweeten it before blending it - taste test. Then the next day after freezing it I put it in the food processor.

 Flourless Carrot Cake Banana Muffins

These are delicious. I added 1/4 c. of raisins and filled the baking cups after greasing them with coconut oil and then doubled the baking time. Check your oven for appropriate time perhaps one muffin before. Usually a muffin/cupcake is at least 25-30 minutes. I also skipped the cream cheese frosting, which I would have used coconut sugar, because I didn't have cream cheese in the house.





 Avocado Flat Bread with Black Bean Dip

I like the variation of these two because I used garbanzo flour in the flat bread recipe (tricky) mixed with black bean dip that has a bit of a spicy kick to it. It's very affordable if you use a food pantry. It's a great snack and very filling even for a lunch.

The snack appears to erase my brain fog, which at the time doesn't appear to be defined, enough to give me energy to do a couple errands. My huge problem I had when run down from abuse with a kid, and even now.

Spicy Tuna Fish Cakes


Another great one for food pantry moms. I used spicy brown mustard though I will look for dijon myself. Loved the extra potatoes in a fish cake (I used a whole cup) as the French; I was raised on salmon potato pie.

My throat was burning, as usual, fighting our elements, and I usually make a natural dessert but was low on milk for the chocolate pudding. I had hazelnut milk in the house. I used that. Wow! My throat was being burst with great nutrients and it was fighting my sore throat. I could feel antibodies entering my body for the fight of what was going on with my body. Please try.

I made an oversized tart out of mine.


I'm suggesting making a crust with almond flour, at least, because I could feel the anti-inflammatory reaction greater. I want to add if you use food pantries hazelnut milk is plentiful here.

I just got this post surgery toothbrush given to me today from the dentist because I have sensitive gums. I was told by the doctor and hygienist how important it is to keep your mouth clean to fight germs that reach the rest of your body causing you to get sick, especially if you have an autoimmune disease.

I just made two batches of wonderful tasting cookies that feel good for me and taste good - warm right out of the oven from Oatmeal with a Fork website. I trust her because she always uses the best dollar for what I'm looking for and gives me the best results where I'm limiting my sugar. I had no coconut sugar so I only used honey in one recipe calling for sugar, so this might be better for you anyway. I always blend my own oatmeal flour with the blender. It's easy and works well and costs so much less than having to buy it. Many food pantries give out oats or at the lower priced stores you can stock up cheaply. A great way to keep recipes gluten free and tasty.





I also blended an entire cup of oats leaving 1/4 c. whole oats for the raisin cookies. And I blended all the flour for the chocolate chip cookies.

I found this wonderful woman that saved me with just three minutes a day. Cutting out refined white sugar and gluten has saved me so far with my chronic illness and other physical limitations because of stress put on my body from abuse. I need more carb burning but desperately needed yoga as well. This short sequence saved me. I memorized the steps and do them just about every night.

 Experimenting with Sugar Free Gluten Free Recipes

After getting away from wheat and going back to it, it goes through my body now. Now I know I have a bad reaction to it, which isn't uncommon for Hashimotos disease, which is a nasty autoimmune disease that attacks my body. I'm just glad I found out. I'm also glad that I have more energy and don't feel like I'm dying now after cutting out refined sugar, white sugar all together for me right now as it stands.



I made a blueberry muffin recipe substituting with leftover maple syrup and a bit of honey for sugar-using 3/4 of the called for sugar measurement, and gluten free all purpose flour instead of regular all purpose flour. I also added in a few squeezes of lemon because I like the idea of lemon blueberry muffins, but most called for too many things I didn't want to use. I'm trying to learn how to substitute regular recipes for gluten free sugar free because all the ones I find when I google call for almond flour, coconut flour, or some other kind of Paleo flour. Now this isn't bad... it's just I don't always want to eat those flours. I grew up on hearty breads, yet I can't eat them anymore. I love the taste of sweetness yet refined sugar turns me off now, gladly to this. So when I use other natural sweeteners that I feel are better I enjoy the taste. But when substituting recipes it can be tricky. I'm trying to get bolder and bolder with this. I have found today you don't have to cut down on the milk when adding a liquid sweetener. It will make the batter too thick.

Stress levels in the body don't raise cholesterol within a week. I find it strange, maybe not so now, that I week before my scheduled doctor's appointment to announce to the world that I lowered my cholesterol over 200 points, 225 to be exact in a nine month period, by diet alone, and not by eating less fat, but cutting additives and preservatives, then eventually refined sugar and gluten, after I had stopped taken my cholesterol lowering medication Lipitor that my head and body started to feel scarily strange. It wouldn't be the first time my body had been exposed to unwanted advances at unfortunate times, after all after being medically counseled on being poisoned with a substance easy to hide in the home of a pesticide component in my food, why would one or others be surprised to a forced situation on my body before a doctor's appointment with such a scandalous bureaucratic society. My body somehow went out of control the week before my appointment and I had to reluctantly surrender to my Lipitor once again, frightfully feeling I should try everything at this point that I had, at this time too. My tests showed the conclusion much lower results, and I had only taken Lipitor for a week; It takes two week for Lipitor to kick into your system at all. The doctor, or PCP, said I didn't need it but could take a dose of 40mg anyway and that it wouldn't hurt me. ?! What's that?

I have now been able to cut it down in half and will continue to those who oppose exposure to substances that are financially beneficial to the few bad bureaucrats that this simple injured woman may have caused a threat to.
