 Honey Sweetened No Bake Cheesecake



 

I served this on top of homemade dark chocolate. I'm going to try on top of homemade almond flour pie crust next.


I added a squirt of lemon on a small part to make it Lemon Cheesecake filling.

For the cream cheese for this I shopped at Whole Foods and got an organic one. I like a lot of 365 products there as well with price and ingredients.

My body can feel deprived from cutting out so many ingredients in my diet. I just mainly completely omit refined sugar and gluten. Since I've cut out wheat altogether I've found my body won't accept it anymore. I'm functioning higher so I assume my body is going to reject it now. Finding substitutes that I've accepted as healthier has made all the difference in the world. When I find a taste that I can lavish over I'm through the roof. My tastes have changed since I've cut out these two ingredients. I can accept the finer tastes that may have been overlooked compared to the quick sweet ones or seemingly more energy ones. I can go now a full meal without a starchy carb more comfortably and feel the difference with a bit of more healthier energy. I don't do this often though. If I substitute a vegetable instead of a carb at a meal I try and include a small snack with a carb, say a small gluten free roll or dessert.


Added a touch of sense reactor with this amazing Cauliflower and Cheese Mac by Chef Pete Evans. I had no heavy cream so I made my own light cream, which is easier with a limited pantry, with milk, butter, and a couple of teaspoons of potato starch. Use your own thickener if needed and if it thins out when reheating it.

Therapy and Chocolate #yummy #Museboatradio #lorijeaninthekitchen

I just learned today during therapy that 6 years of abuse from my ex is too intolerable. Six years I let my ex scare me after physically abusing me as a child and then adult - just waiting for it to happen again, begging him on my knees to stop as he laughed because he knew he was scaring me as he would force motion pounces at me. He eventually came home and would throw large pieces of furniture in our living room as I stared on. I would go to work shaking. I found that scoundrel made me feel like I was a piece of poop. Even after all these years I still see him coming after me, and not alone now but with friends. I have to hold my unborn child that he killed until I can find a way to let go of her. I'm learning how to make my own surroundings around me safe. AND that I'm not a piece of POOP!! If it wasn't for Cristiano Ronaldo the Portuguese soccer icon to fill so many accomplishments in his life I would still think I'm a piece of poop. I kept going stronger and harder watching him go.

I'm always sharing how coconut flour helps me. I always feel more energized and alert. This helps your emotional state. This is why I'm always experimenting on ways to cook/bake with it. I think I found a neat tasting cake. It may  not taste sweet enough for you at first but your body gets used to it. It actually starts to like the finer things in life. I know I love my homemade dark chocolate with honey or molasses better than regular chocolate. I look forward to the fine taste.

Homemade Paleo BBQ Sauce and My First Piece of Grass-Fed Bison #lorijeaninthekitchen #holisticyeah #holisticmedicine #museboatradio @museboatlive






Homemade BBQ Sauce from Juli Bauer's Paleo Cookbook p. 278
I added a touch of honey. Mouthwatering. I like my chicken grilled dark.



My first piece of grass-fed bison. It gave me a kick like liver.


Summer Squash Gratin
I used breadcrumbs and didn't have cornmeal and it was still good. I looked forward to eating it which is important to me. I added extra cheese too.

These are heavenly and light. Coconut flour is tricky to cook with so don't be scared of the texture. I used raisins and found that using lighter fruit is better when solely using coconut flour. Also make sure you feel the spring back when baking. This will ensure this kind of flour is cooked thoroughly.

3 Bean Turkey Chili and Homemade Italian Dressing #lorijeaninthekitchen #goodfood #healthyfood



Turkey Chili
I made quite a bit of changes where I don't like things too hot. I can't imagine how anyone can handle the amount of spices that are called for. But with that said, with a bit of tweaking it's delicious. I omitted chili powder, red or yellow pepper ( I had green peppers in my canned black beans), chipotle powder, used less jalapeno pepper, only used 1 tsp of cumin, a pinch of cayenne pepper, used two beans (kidney and black beans), added 3 stalks of celery sauteed them before the onions and jalapeno for at least 5 minutes, used tomato sauce I had in stock instead of canned tomatoes, used my own homemade chicken stock and definitely squeezed lime on top as well as crumbled some smoked cheddar I had in the house.
Homemade Italian Dressing
This stuff is delicious. I couldn't believe how much better it is than just using oil and vinegar and so much better than store-bought dressing where there's so many chemicals. I loved the white wine vinegar in this and also when using on fresh green salads adding provolone to bring a fresh Italian restaurant flavor is a plus. It states on the recipe page that this is a good marinade. I wouldn't doublt it.

 Homemade Chip Dip
Very affordable and yummy.

 Tuna Cakes
These make a wonderful way to make those darker cans of tuna taste absolutely delicious!!

Parmesan-Zucchini Fritters to Chocolat Banana Muffins #youarewhatyoueat #sogroovy #lorijeanfinnila


These are so good with sour cream and more parmesan on top. I used fresh graded parmesan cheese. 
I was in the midst of making these.



I added a pinch of anise and used coconut oil instead of butter. I also added everything together at the same time and baked it for almost an hour. I would use less coconut oil next time and more toward a pinch of anise. Anise brought fragrance to it and it only had a bit of crisp from the oatmeal. Very tasty and good for breakfast too. This helps my fatigue and sugar cravings.

Chocolate Chip Banana Muffins
I haven't been crying for chocolate. I used honey and 1 tblsp of cinnamon.


Crusted Mashed Potatoes
Unbelievably good. I felt I was exploring another culture of food which I enjoyed tremendously. I used gluten free breadcrumbs which worked fine.

Sloppy Apple Pie Square
This is the best pie crust I've made for a dessert. I used scraps leftover from a French Canadian salmon pie I made after leaving it in the fridge for a bit. Oh so delicious. I used Bob's Red Mill 1:1 flour and coconut oil. I didn't miss the butter in this recipe. I also used some of the apples in the recipe above scraping of the oats - the anise was the winner in this filling. Just the touch of it brought a rich essence to my mouth.

Salmon Cakes made with pumpkin puree and egg. I borrowed  "the Heal Your Gut cookbook" by Hilary Boynton and Mary G. Brackett from the library. The recipe is on p. 151. The cakes were so good I didn't need the lemon pesto to go with it.






 Tender Pan-Fried Chicken Breasts

This is the best pan-browned then baked chicken I've ever had. The spices and herbs combined are phenomenal. The ginger, dried mustard and thyme were just the beginning to this. I had some gluten-free flour in the house if you choose to go that route. I also cut the recipe in half and used olive oil. I was so happy to use the tarragon I just bought and was dying to use.

Milk is healthy for energy for our bodies because of its phosphorus content which carries B vitamins. B vitamins are in healthy fats such as salmon. Olive oil is high in B vitamins. Why milk gets all the bad rap and I have to constantly feel bad about feeling great after drinking it is unneccesary. So if you feel like you need to drink milk, drink it!
