Bone Broth Everyday is the Healthiest Thing You Can Do For Yourself #healing from #trauma #abuse #lorijeanfinnilinthekitchen

I know with all my joint pain from injuries keeping them lubricated is essential not to cause further ailments to my body from being too fragile because of them. Along with that I have head injuries from abuse I have to worry about where I can have shakes/seizures to keep down and out of me. Bone broth helps there as well, with more natural fat from the meats for me. Tight on a budget and possibly afraid of the natural fat try using bones saved from your meals saved in the freezer to make your own broth. Not only does it taste better than the store bought but it's better for you with no chemicals, preservatives, or the small amounts of bacteria and bugs the FDA allows during processing in your body. You're not strong now perhaps, your body doesn't need this. A healthy body is a healthy mind. Keep it strong whether you're running from abuse, have been abused, or are in it at this present moment.

There's many things you can do with the broth. Cooking the bones on simmer for two hours with rosemary and bay leaves, some salt and pepper to taste, brings a wonderful flavor to your dishes. It's universal using those spices and healthy for you. If you have even half a cup a day of the broth or something you made with it you're doing your body a favor. I've actually kept my numbers in place with my illnesses this way.

Pea soup is what I made today. I didn't have much to go with it. I have my broth, I have the peas in a bag. I cut the recipe in half and used 2 1/2 cups of the bone broth to 1 cup of dried peas, where I only had so many bones just cooking for myself for the week. Vegan recipes online appeal to me because I can bring out the flavor in foods without using many ingredients. I can't believe I made this soup myself and it tastes great. You don't have to put all that parsley on top. I did it for the picture but that tasted good too. I only used celery seed and dried minced onion as well. Didn't have carrots or green onions. I wanted to find a way to fit a vegetable into my week without having to worry about having a lot in the house. This worked. You can make your own vegetable broth as well if you wish. I haven't tried that yet.

I found this wonderful, fun mug cake recipe. I couldn't wait to try it. I was so busy this morning and needed something special; this fit in perfectly. I only used coconut sugar the entire recipe. I blended the amount for the icing in the food processor. It came out a bit lighter and I had plenty of icing and some left over. I finally found a gluten free flour that cooks well, is light and fluffy, and I DON'T miss the wheat at all. This flour has a light denseness to it that's perfect. My stomach was thanking me for using gluten free. On to make pizza with it next. I got it in the gluten free flour bin at Winco grocery store.

If you enjoy the taste of oat, as I do now trying to find gluten free options - this one coming closest along with garbanzo bean flour to wheat, you will enjoy these pancakes. I love using the blender for recipes and these women I find recipes from rock!


Pancake Recipe

With this one I cut the recipe in half and added one egg, nice amount of cinnamon, 1 tsp of vanilla, 1/2 tsp baking powder (I use aluminum free .99 at Trader Joe's), 1/4 tsp baking soda, 1 tsp apple cider vinegar (or you can use lemon), 1 1/2 tbsp of honey, and used butter to cook the pancakes with. To keep it vegan you can use a flax egg and use coconut oil to cook the pancakes with. I used regular milk because this was all I had in the house. Double my added ingredients if you use the full recipe. I used honey, as I always have in the house, for the syrup on top. Very yummy and filling and I have four to five breakfasts out of it. Still gluten free and refined sugar free that I stick with.

These are amazing and satisfying me not to crawl the wall for a refined sugar sweet or wheat. I just swapped out the regular sugar and stevia for 3 Tbsp of coconut sugar and used a healing scoop of raisins instead of chocolate. I greased the cookie sheet with coconut oil.

Chick Pea or Garbanzo Beans give me energy to help fight the fatigue. Where I don't eat refined sugar these were a lifesaver to help me stay on this road. They didn't have that tang or dingy flavor of chick peas, especially in a dessert. Loved them. Sorry about the yellow draw line in the photo. I couldn't get it out.


 Chick Pea Flour Brownies

I didn't have instant coffee so I used extra cocoa powder instead. I used coconut sugar and even cut the recipe in half and used a loaf pan. It worked great. I also used the usual homemade chocolate recipe that I got online.

I couldn't believe how good these muffins were. I used regular milk because I didn't have anything else in the house. I omitted the nuts.

                                                                                                     
This soup is great. I didn't have have heavy whipping cream so I used half and half. I also put less broccoli because I didn't have much.

The spices in this chicken wake up my senses. I feel more connected. Sage is very good for you. I usually can't find recipes where I appreciate the taste of it. I made a gravy of the juices at the bottom of the crock pot mixing cornstarch with it. This is one of my favorite, if not favorite ways to make chicken.

I used coconut oil for the fat, rubbed sage, and omitted the curry.

Homemade Tater Tots
I left the dill out and didn't even have to squeeze out any excess water. No chemicals and saves you from having to go to the store and buy a bag.



As I promised, I'm also sticking to beans, at least one dish a week. I spread it out throughout five days. It buckles down the budget and gives me variety with my vegetables.

Italian Vegan Garbanzo Bean Soup




I left out the cherry tomatoes and only used 1 c. of vegetable broth (I made mine in the instant pot with 1 1/2 c. white lima beans to 3 c. water, rosemary, and a bay leaf and some small carrot pieces). I used the broth from this and it was DELICIOUS. Making the broth again I would put a bit less beans to water. I used celery seed which I do quite a bit instead of celery. It keeps better and I think adds a better flavor. So far, this is the best bean soup I've made.


Instant Pot Potato Leek Soup
Adding one more potato recipe, this is the BEST potato soup I've ever had. I didn't have any leeks and just used onion and it was still great. I also used a homemade seasoned sea salt recipe.

First bean recipe:

Slow Cooker White Bean Soup

Not the best picture but this soup is yum. I will eat this all this week for sure. I had a tuna sandwich with it with homemade mayo - was a bit tricky with a 400 watt immersion blender, but still tasted good, it just wasn't quite as thick as I would like. What amazed me about this soup was the fact that the directions to smash the beans slightly to immerse their flavored liquids into the soup at the end while adding the salt to taste seemed key here. I never expected that was what was going to make the soup taste so good. It brought a wonderful broth flavor to it, so don't be fooled as you stir it along the way if you choose and taste it a bit, even before the last step that I mentioned. I cut the recipe to 1 1.2 cups of beans and 4 cups of water and slightly adjusted the other ingredients to this.




To finish it off I ate my delicious handmade Gelato. I use a papaya that I had and had put it in the freezer first and only used 1 c. of coconut milk and some honey to sweeten it before blending it - taste test. Then the next day after freezing it I put it in the food processor.
