I had been looking forward to using ginger and turmeric in a recipe. And alas! I found it and made it today. Definitely use chicken broth. I made my own homemade this morning cutting out the bones from the thighs of quarters. Tastes yummy. My stomach thanks me and I feel good.

I wanted to make a tuna casserole with white sauce but hadn't been able to find the right combination that tasted the way I wanted it to. Today I think I finally did it, though I would have put and extra pat of butter and an extra clove of garlic into the butter sauce mixture - which I've added here. This reminded me of a dish at the sea.

2 cans tuna in water (drained)
1 c. recipe white sauce (standard is fine - though in this I sauteed garlic and onion into the butter first)
3 c. al dente pasta
1 c. steamed broccoli chopped
Butter sauce - 2 tablespoons butter and 3 cloves of garlic minced sauteed into the butter

Bread crumb topping
1 slice of bread toasted for bread crumbs and broken up into fine pieces
1 tablespoon of butter
Melt butter and brush over the bread crumbs once on top of casserole.

Put the pasta into a casserole dish. Add tuna. Add broccoli. season with salt and pepper. Stir butter sauce into the pasta mixing all the ingredients just until blended. Top with breadcrumb topping. Bake in oven at 350 for 35 - 40 minutes.

Just made these any flour 3-ingredient no sugar crackers. My choice of spice was turmeric. I can feel my digestive system thanking me. Yummy! Recipe at Oatmeal with a Fork food blog. I love the recipes this woman puts out. It's so nice to see women get together and share their spirit and knowledge to help each other.

Lori's Creamy Organic Potato Soup

I made this really cool single serve soup today. I used one medium yellow potato, ¼ c. milk, dash of salt, a bit of onion, and ½ c. of homemade chicken broth. I used a green herb spice to put on top. I sauteed the chopped onion, I used about 3 slices of onion not too thickly sliced, in a bit of unsalted butter. Then I added the chicken broth, salt, and the potato sliced in eighths. I cooked until tender. Then mashed with my hand mixer. Added the milk and my sprinkles of my herb spice. Oh so yummy. This green herb spice appears to give me more energy.




I use all organic now or I get real sick.

I had limited items that are organic in the house as well as vegetables. I wanted to use my pasta where I had plenty of it, so I made this up.



Organic Thyme
Organic Yellow Onion
2 pieces of Tilapia (I used frozen thawed) about 1/2 lb.
Organic Pasta
Organic milk
organic unsalted butter
organic all purpose flour

I had a little bit of onion leftover, less than half a cup. I chopped that up and set aside. I put 2 tbsp of butter into a small pan with 2 tbsp of flour. I whisked that together at low heat until it was mixed. Then I stirred in 1/4 tsp of salt and slowly added the 1 c. of whole milk and whisked it until it thickened. I added some of the chopped up onion when I took it off the burner to add taste to the bechamel. I steamed/sauteed the fish in olive oil and thyme and sea salt until it was almost all the way cooked at low heat. I then used my plastic spatula to chunk it up. I added 2 ladles of my homemade chicken broth for the fish to soak up the juice. I mixed one cup of cooked pasta with the fish and rest of onion into my baking dish, then pouring the bechamel sauce over it all mixing it together lightly. I toasted 3 sliced of organic white bread overly and crushed in on top of the mixture patting the breadcrumbs with olive oil. I then baked it at 400 degrees for about 25-30 minutes. My confection oven works under heated, so you may work well at 375. That was my first choice.

My organic flaxseed egg and coconut oil pancakes.

Recipe:

1 tblspn organic flaxseed meal
3 1/2 tsp baking powder
1 tsp sea salt
1 tblspn honey (didn't have organic on hand)
1 1/2 c. organic all purpose flour
1 1/4 c. Organic milk ( I used whole diluted because low-fat milk has synthetic vitamins)
3 tblspn organic unrefined coconut oil

First soak the flaxseed in 3 tblspn of filtered water for at least fifteen minutes.

Then mix flour, salt, and baking powder together in a bowl. Whisk together coconut oil and  honey in a separate bowl. Then whisk in the milk to the honey and coconut oil. And then whisk in the flaxseed egg. Add these wet ingredients to the dry ingredients using a spatula to scrape the sides

Scoop desired amount into a greased pan - I used organic olive oil. Cook until bubbles show through the top on medium high heat. Then flip. Let it cook for a few more minutes. Drizzle some more honey on top. Yummy!

For those abused, doing yoga, even a few minutes a day, will leave you looking 10-20% better. It took me a year to get my back tightened, after so many nerves torn, with yoga.

I'm battling my weight still like a mamma grizzly bear, but my confidence is up which leaves my mind in a healing state - a way to find its way back to its own metabolism.

I need my chocolate. So this pie hits the spot. I feel I've been eating a bit much sugar so I felt to use a honey pudding recipe. As well I used a tablespoon of honey in the crust after I mixed in the butter and shortening. For shortening I use an organic coconut palm shortening.

I was grateful to find this recipe. I had plenty of ground turkey and have a hard time finding beef right now. I need good flavors to hold me over in this fight to health - it perks me up. Moreover, I need it healthy and for me to be able to eat it. I'm tired. I ventured outside the apartment building to do two very needed errands close to home. I'm a bit fatigued from the air now and I had to work with the mask to get air. Then cleaning down when I get home is a chore. Having that dish lights my senses happily sending positive signals to my brain. Also knowing I have more meals already cooked to look forward to is rewarding and gratifying.



I rinsed the brown rice before cooking as well as after and soaked it over night. What a difference. My stomach thanks me and it tasted better. Will do this again. Don't have gluten free egg noodles and I used a bit of some leftover all purpose gluten free flour where I didn't have organic white rice flour and haven't learned to make my own healthy gluten free flour preferably without brown rice, which I learned by consumer reports it has 80% more arsenic.

I know with all my joint pain from injuries keeping them lubricated is essential not to cause further ailments to my body from being too fragile because of them. Along with that I have head injuries from abuse I have to worry about where I can have shakes/seizures to keep down and out of me. Bone broth helps there as well, with more natural fat from the meats for me. Tight on a budget and possibly afraid of the natural fat try using bones saved from your meals saved in the freezer to make your own broth. Not only does it taste better than the store bought but it's better for you with no chemicals, preservatives, or the small amounts of bacteria and bugs the FDA allows during processing in your body. You're not strong now perhaps, your body doesn't need this. A healthy body is a healthy mind. Keep it strong whether you're running from abuse, have been abused, or are in it at this present moment.

There's many things you can do with the broth. Cooking the bones on simmer for two hours with rosemary and bay leaves, some salt and pepper to taste, brings a wonderful flavor to your dishes. It's universal using those spices and healthy for you. If you have even half a cup a day of the broth or something you made with it you're doing your body a favor. I've actually kept my numbers in place with my illnesses this way.

Pea soup is what I made today. I didn't have much to go with it. I have my broth, I have the peas in a bag. I cut the recipe in half and used 2 1/2 cups of the bone broth to 1 cup of dried peas, where I only had so many bones just cooking for myself for the week. Vegan recipes online appeal to me because I can bring out the flavor in foods without using many ingredients. I can't believe I made this soup myself and it tastes great. You don't have to put all that parsley on top. I did it for the picture but that tasted good too. I only used celery seed and dried minced onion as well. Didn't have carrots or green onions. I wanted to find a way to fit a vegetable into my week without having to worry about having a lot in the house. This worked. You can make your own vegetable broth as well if you wish. I haven't tried that yet.
