Honey-Turmeric and Ginger Tea #digestiveissues #womenwithinflammation #abuseinjuries #lorijeanfinnilainthekitchen

I made this in the instant pot. I'm sure you can make it on the stove. This tea helps my digestive issues or gut health as a lot of us are knowing of it now.

I used to put ginger and turmeric in my smoothie which made it bitter. I needed these two in the morning or I would cramp in my stomach bad which because of the gut issue happening would then immediately lend to my head injuries with pain, discomfort, and confusion, as well as to the pain in the rest of my body from injuries from abuse as well.
I got the recipe from a book I borrowed from the library by Coco Marante on instant pot cooking.

Homemade Rosemary Bread #brainsupport #spices #lorijeanfinnila

Rosemary has such a positive effect to my brain. I feel more clarity as if I'm getting more oxygen when I eat it. I happily went to the library yesterday and picked up two books on cooking with spices and their history. I was intrigued, and had been, by my Portuguese ancestors part in this.

I saw a recipe for rosemary bread in one of the books and thought to make some. I couldn't use that recipe because I didn't have anymore bread flour that I was hoping to use up but I happily found this one. I swapped out honey for the sugar. I'll be eating soft eggs on toast and a pasta sauce with an organic rosemary turkey patty sandwich, that my son got me the patties, tonight. I also thought to make one large loaf. I think it's better suited for sandwiches.

Ginger Turmeric Chicken #lorijeanfinnilainthekitchen #healthyfood

The taste is here. I will leave the potatoes larger next time and use fresh celery instead of blanched and frozen.

Healthy Morning Breakfast! #healthnutnutrition #lorijeanfinnilainthekitchen

I'm grateful to have information from @healthnutnutrition for this healthy breakfast.

My eggs didn't come out as good as they usually do following her method. I used a nonstick coated pan this time and they came out soft boiled. Stick with stainless. I love the chia jam and the kiwi with breakfast. I made some flatbread for sandwiches later. I felt really healthy after breakfast.

Cajun Instant Pot Chicken and Rice #spicy #healthyfood #lorijeanfinnilainthekitchen #healing

It's hard to believe a woman with inflammation thrives on spicy food - I do though! I'm taken by the smells and aroma and feel taken away to an exotic place. It brings me fun and pleasure. And funny because it doesn't appear to hurt me. The chicken I had been eating was doing most of that. I finally dug into my piggy bank, son helps, and got rid of cheese (too much salt - mostly, found a new brand Organic Valley Cheddar, yeeks) and bought organic chicken. Won't be doing white meat much but I will savor this and got five servings and three of a side dish of rice extra to that. Was so yummy!

Smiley Food #smileyfood #lorijeanfinnilainthekitchen

This chicken put a smile on my face and is too good not to mention. Will all the things I eat that I don't like I have to mention my 'smiley face' food. I used the air fryer. The thighs take longer to cook and I spritzed it with olive oil. I'm a fan of paprika so this recipe caught my eye. Surprisingly the few spices give a wonderful bang. I probably put a pinch more of cayenne. I tried the avocado sauce at a different time on a sandwich and it was delicious.

All Time Favorite #herbsdeprovence #chicken #instantpot #lorijeanfinnilainthekitchen #womenwithinflammation #abuseinjuries #tryingtoheal

This is truly one of my favorite recipes. I used up my herbs de provence that my son bought me a couple of years ago - geez, could be three, along with other gifts. I used chicken thighs and took the cooking time down a minute and the delayed pressure release about 2 minutes. I had the bone in my chicken. I couldn't resist the extra minute on each side for browning. I also only used cooking spray to brown and used homemade vegetable broth as the olive oil, wine, and water. I had a nice amount of gravy with this. I added 2 tablespoons of cornstarch at the end to some of the juices in the pot after whisking that separately and it quickly turned to gravy. With saffron rice it was delicious. I can taste all the spices and herbs so much more now.

I'm even going to heat up my instant pot spaghetti tomorrow again with a few fresh basil leaves underneath stirring it as they wilt and slowly turning fresh parsley into it after serving. So good! And the herbs are so healthy and healing.

Coconut Flour Black Bean Brownies #healthy #coconutflour #blackbeans #womenwithinflammation #abuseinjuries #tryingtoheal #lorijeanfinnila #singersongwriter #inthekitchen

I'm Extremely Lucky I was able to finagle this recipe from what I had at home.
I always use my own homemade chocolate, which I had a small amount, so the liquid of making more not solid had to suffice, leaving more liquid to the recipe, adding extra to the hour time of a three to four time extra needed for my mini convection oven I have to use. I only had one egg which is 'a beware' with coconut flour; I used 3 flax eggs - Yeeks! I added two extra tablespoons of coconut sugar for tasting and lost a corner of my silicone spatula when deciding to do the whole recipe in my new 8 cup Black and Decker food processor my son got me - LOVE it! ♥️ after I decided to stir in the extra chocolate chips that way. Stuck my fingers through the batter after realizing this after over accentuating the heat in my convection oven to make up for the thermostat problem. Didn't find it. Have to hope I don't digest it. I'm thinking these are the best brownies I've made. Hoping the coconut flour brings me extra energy. I think these are the best brownies I've made.
(Found the piece of the spatula while slicing them.)

I also made just the filling of Spain on a Fork's baked stuffed peppers it was so good.

Was so blessed to have this come out so well today. I LOVED it!!! Used up my Greek yogurt.

Spain on a Fork Recipe

I made strawberry chia jam. I'm shocked. This is so succulent. Used coconut oil instead of butter.

Super EASY and Delicious Air Fryer Donuts #cinnamondonuts #greekyogurt #airfryer #lorijeanfinnilainthekitchen #notburning #inflammation #abuseinjuries #womenwithinflammation

I've been hoping to cook with Greek yogurt but needed enough recipes to justify spending as much money as it costs for an organic low-fat Greek yogurt. I was lucky to find a good yogurt for a good price at Whole Foods in their 365 line. And I found many recipes for this week.

These donuts are delicious if you do everything needed. I added one tablespoon of light amber organic honey and 1 tsp of pure vanilla extract to the yogurt and stirred it well before adding it to the flour. I also brushed the donuts well with organic coconut oil and after they came out before dipping them in homemade cinnamon sugar (I used coconut sugar and cinnamon) and as I ate them. Yummy!!!!!
Not feeling lonely.

Spanish Chickpeas and Sweet Potatoes #yummy #healthy #helpful #lorijeanfinnilainthekitchen

I'm not a fan of chickpeas or sweet potatoes but this was very satisfying and budget friendly for three off meals to traditional protein. I've been trying hard toward this. I used a bit of homemade vegetable stock that I made this morning because I dice my own tomatoes from the store so I didn't have that extra liquid from the can of diced tomatoes for the recipe. I also used smoked paprika and a touch of cayenne pepper for the hot smoked paprika that I didn't have. This was very tasty. I only used cooking spray and my mini air fryer for the sweet potatoes. I found this a challenge and found 5 min at 380° then flip them and another three minutes works well. Thank you Spain on a Fork.
